Ingredient Selection: The First Decision

I wanted to have a tool in my daily life that I could always "return to" no matter what the day brought.

Ingredient selection was one of the most critical decisions. It needed to be easy on the body, whether at home or out, and have a long shelf life. It also had to be rich in vitamins and minerals, using a RAW method to preserve nutrients without heat. We spent a year and a half selecting and sourcing ingredients and designing the product.

The Quiet Density Nurtured by the Desert

What we found was "dates" that grew in the Iranian desert and ripened on the tree. The nutrients accumulated by the plant in the arid environment are quietly concentrated within the fruit.

Despite being organically grown (without preservatives, chemical fertilizers, etc.), its low moisture content and high sugar content allow for long-term preservation in its natural state. Dates became the central ingredient in our design. Our partner supplier maintains thorough hygiene management based on global food safety certifications (FSSC22000, HACCP, ISO2000, KOSHER, HALAL).

Towards "Clean Fruit"

What we valued was integrity, even in the unseen aspects.

  • Transparency In the manufacturing process of typical dried fruits, sugar, preservatives, and colorings are often used. Even if a product claims to be "additive-free" or "refined sugar-free," it is not uncommon for the raw dried fruit itself to contain these. We use "clean dates (and figs)" that are additive-free from the raw material stage.

  • The Value of Traditional Hand-Harvesting Iranian dates are still carefully harvested by hand, bunch by bunch, using traditional methods. This avoids stress on the trees from machine harvesting and minimizes risks such as sand contamination from falling to the ground. This meticulous handwork preserves the purity of the ingredients.

Ingredient Standard

We select high-quality ingredients and simply combine them, bringing out the unique characteristics of each. We avoid unnecessary additives, stripping things down to be as minimal as possible. That depth quietly descends the moment you savor each piece.
